So cold brew takes a product that is notorious for being infected by fungus and puts it directly in a medium that allows fungus to flourish: darkness, aqueous environment with nutrients, and long time duration for logarithmic multiplication... I only have limited cold brew experience however, so that's just a guess.

And I have wondered about how nutrients like magnesium make it into a cold brew vs a hot brew. We should crowdfund some research.

I've been drinking a lot of it.
Cold brew is a convenient way to make a large batch to store and drink throughout the week
