He doesn't disagree that with a ketogenic diet you won't gain adipose tissue. He just doesn't know if a ketogenic diet is good or not, and worries about the safety of it.

I don't think it matters. I don't see how lactic acid and bacteria would change the structure of the fat.

There is a possibility of bacterial degradation of estrogens and other hormonal toxins in dairy fat that is fermented.

The milk fat itself is composed of relatively common fatty acids for its majority. A smaller percentage are uncommon, like: butyric, vaccenic, cla, rumenic.

When some peat followers really think that, its a shame. Its pretty stupid to think that you can eat unlimited fat without getting fat, particular if u combine that fat with a bunch of insulin stimulating carbohydrates. My personal experience is that when I want to get lean, I have to cut down my fat intake and/or try to raise my metabolic rate, and that is what Peat recommends. A simple way to raise the metabolic rate is to eat more calories, especially Carbohydrates and Proteins, and/or to do so some resistance exercise to increase your fat burning muscle mass and its glycogen store.

But VOS is right, that a ketogenic diet doesnt make u fat. Even if its a result of stress, ketosis has been helping many overweight people to lose fat because its a fat conversion and burning state, without much glucose that would interfere with the fuel selection (Randle Cycle). Peat says that some people do good on a low carb diet, but I wouldnt recommend it if there is no reasonable need for it. I wrote an german article about this subject some years ago.
